In a deep stainless steel pot, add 2 tablespoons of olive oil and heat it up. Once the oil is hot, add the chopped vegetables and start saut\u00e9ing them. While the vegetables are saut\u00e9ing, add 1.5 cups of well-washed lentils and 1 teaspoon of pepper paste to the vegetables, stir until the vegetables change color. Once the vegetables are lightly saut\u00e9ed and softened in their own juice, add the chicken broth and water. Then add salt, black pepper, and the mixed spices I got from @dat\u00e7ak\u00f6y\u00fcr\u00fcnleri. Let it cook for 15 minutes and then lower the heat. As the lentils cook, they break down, and the vegetables become very soft. Blend the soup with a blender until it gets smooth. In a small pan, melt 2 tablespoons of butter, add red pepper flakes and mint, saut\u00e9 them, and then pour this buttery mixture into the soup.
